Head Winemaker Glen Caughell oversees production, with extended oak aging contributing smoky, spiced character to the finished wine. Notably, the Private Selection range also includes a rum barrel-aged variant, but this standard bottling relies on traditional oak maturation to let the Merlot varietal character take center stage.Tasting NotesAroma: Ripe black cherry and plum jam lead the nose, followed by layers of dark chocolate, raspberry, and a subtle earthiness. Hints of black olive, tea leaf, and baking spice emerge with time in the glass.Taste: The entry is fruit-forward, with plum and black cherry dominating the early palate. At mid-palate, smoky oak, roasted coffee, and milk chocolate arrive alongside bright acidity. Fine-grained tannins provide structure without overwhelming the ripe fruit core.Finish: Medium in length with coarse but approachable tannins that fade into lingering notes of sweet oak and dark spice. A thread of cherry and cedar carries through to the close. How to Drink Private Selection MerlotThis Merlot drinks well at a slight chill—around 60–65°F—and benefits from 15 to 20 minutes of breathing after opening. Its fruit-forward profile and soft tannins make it versatile in cocktails and wine-based drinks. A Kalimotxo (red wine and cola) works with the plum and chocolate notes for a casual summer serve. A classic red wine sangria loaded with stone fruit and citrus amplifies the cherry and spice character. For a simple winter warmer, a mulled wine preparation with cinnamon and orange peel complements the existing baking spice notes nicely.Best For Weeknight dinners with pasta, red sauce, or grilled meats Introducing a new wine drinker to California Merlot Hosting casual get-togethers where an approachable red is needed by the bottle Stocking a home bar with a versatile, food-friendly red Frequently Asked QuestionsWhat does Private Selection Merlot taste like?
