When we first cupped this, we genuinely didn't believe it was coffee. Jorge Rojas's Tabi from Planadas, Tolima — anaerobically fermented, washed, grown at 1,850 metres. Floral, ras pberry, orange, milk chocolate, roasted hazelnut. Chewy, elegant, wine-like at the edges. The kind of cup that makes you stop mid-sip and just stare at the wall for a second.
