Rolled roast is the all-rounder of the roast world — easier to carve than a bone-in, more tender than a brisket, and rich with juicy beef flavour. Choose your size: Small — 1.1 to 1.3kg — perfect for 2–4 people Medium — 1.5 to 1.7kg — feeds 4–6, our most popular size Large — 1.9 to 2.2kg — feeds 6–8, plus roast beef sangas all week How to cook it: Rolled roast is forgiving — perfect for the home cook who wants reliable results. Roast oven (best result): Bring to room temperature. Season generously and rub with oil. Sear in a hot pan on all sides, then roast at 180°C for 20–25 minutes per 500g for medium. Rest covered for 15 minutes before carving. Slow cooker: Sear first in a hot pan, then slow-cook with stock, onions and garlic for 6–8 hours on low. Falls apart. Pot roast: Brown in a heavy pot, add wine, stock and veg, cover and cook at 150°C for 3–4 hours. Carve across the grain in thick slices. Serve with roast vegetables, gravy and Yorkshires on Sunday — slice the leftovers cold for sandwiches with mustard and chutney all week.
