Winemaking Process Our Rosé 2025 is the result of a careful vinification process that combines two distinct methods to best enhance the Corvina and Rondinella grapes grown in our family vineyards on Lake Garda. Direct Pressing A portion of the grapes undergoes direct pressing immediately after harvest. This method produces a must with a delicate, bright rosé color, preserving the freshness and elegance of the fruity aromas. Cold MacerationAnother portion of the grapes undergoes a pre-fermentation cold maceration for about 24 hours at controlled temperatures between 12-14°C. This technique allows for the delicate extraction of aromatic compounds and pigments from the skins, enriching the wine's bouquet with notes of red fruits and floral aromas, without imparting excessive tannins or intense color. Fermentation and Aging After separating from the skins, the musts obtained from both methods are fermented separately in stainless steel tanks at controlled temperatures around 18°C to preserve primary aromas. After fermentation, the wines are blended to create a harmonious balance between freshness, structure, and aromatic complexity. This combined approach to vinification allows us to produce a rosé that best expresses the unique characteristics of the Lake Garda terroir, offering a fresh, elegant wine with a rich aromatic profile.
