The Pinot Noir grapes for this sparkling Rosé originate from calcareous loess soils and undergo a gentle whole bunch pressing following the harvest. The base wine matures for ten m onths in stainless steel tanks and oak casks. After bottling for a second fermentation, it gently rests for 24 months on the lees. Meticulously hand-riddled and disgorged on the estate, it presents a creamy mousseux texture.
