We practice high-end viticulture to unlock the full potential of our vines, showcasing the distinctive character of the Shabo terroir. Hand-harvested early in the morning, the grapes arrive at the winery within 15–30 minutes for immediate processing. They undergo destemming and gentle crushing andpressing in pneumatic French presses (Pera), with the must selection done exclusively by tasting to ensure the highest quality. Fermentation takes place in stainless steel tanks, followed by brief aging on fine lees for less than a month, enhancing freshness and purity. Aging at home: This wine is crafted to be enjoyed now – perfect for savoring the moment. Color: Pale rose. Nose: Red fruits, delicate notes of strawberry and raspberry, yogurt. Palate: fresh, good and well-balanced acidity. Lengthy finish.
