Following the elegant, crisp floral notes of Alpine Bloom, we wanted to find an origin that delivers an explosion of vibrant, deeply saturated fruit flavors. We’ve been working closely with our traders to source a lot that brings massive juiciness and incredible cup clarity to your morning routine. Enter Ruby Drop, a clean and structured Kenya AB that showcases the absolute pinnacle of traditional Kenyan coffee processing. Perched on the fertile southern slopes of Mount Kenya, the Kathakwa Factory draws its exceptional cherry from more than 1,000 dedicated smallholder farmers straddling the Embu–Kirinyaga border. Under the care of the long-standing Kibugu Farmers Cooperative Society, these farmers receive continuous agronomic training and support to bring out the absolute best in their heirloom SL and modern varieties. After being delivered daily, the ripe cherries are processed using traditional disc depulpers, undergo a meticulous 24-hour wet fermentation, and are finished with a pristine clean water soak. This deep wash guarantees the thorough removal of mucilage and unlocks a cup of pristine, hyper-bright clarity. Slow-dried on raised beds for up to two weeks, Ruby Drop pours like a craft infusion. It opens with the punchy, tropical sweetness of muddled strawberry and exotic dragon fruit, cuts through with a sparkling red grape acidity, and leaves a lingering, elegant finish of steeped hibiscus.
