Allergen: None Vegan: Yes An Old Fashioned is the most reduced cocktail there is: spirit, sugar, water and bitters, which is the definition the word itself was given in 1806. The discipline is in not adding anything else. The only real question is which spirit. We use a dark Bajan rum with the depth to carry demerara sugar and bitters, with cardamom and vanilla threaded through it. Weeks of ageing take the edges off the rum and turn the sugar into something closer to depth than sweetness. There is no muddled fruit and no soda. Three or four things, doing exactly what they are meant to do. Serve it over one large piece of ice in a rocks glass, with a wide strip of lime peel. The ice is not only for the cold. As it goes, it is doing the third job on that 1806 list.
