This is AAA-certified Alberta beef, sourced from Cargill and butchered as a true rump steak. Top Sirloin trimmed without the top cap, giving you a leaner, more uniform steak with a firm texture and deep beefy flavour. In North America this primal is usually sold with the cap still attached and labelled as top sirloin. We remove the cap the way a traditional butcher would, which is what makes it a rump steak.
