Saicho Sparkling Jasmine Tea is a non-alcoholic sparkling wine alternative made with Fuding Big White Leaf green tea from the mountains of Fujian Province, China. Grown at approximately 500 meters altitude, the tea leaves are hand-harvested in early spring, then stored until summer when jasmine flowers are ready to bloom. The scenting process is slow and precise. Jasmine blossoms are picked at midday, laid over the tea leaves, and left to open as they cool, releasing their fragrance into the highly absorbent leaves. This is repeated over several nights until the floral aroma is beautifully balanced. Cold brewed for 24 hours, Saicho Jasmine has a pronounced floral character with jasmine flower, blossom, lemon peel, and fresh-cut pear on the nose. The palate brings apple, lychee, vanilla, rose petal, creamy texture, and a refreshing spicy finish. Pair it with spicy Asian salads, creamy desserts, fruit tarts, or soft cheeses.
