Pillot's Saint-Aubin 'Le Ban' is produced from Chardonnay vines which are over 40 years old. He ferments utilizing indigenous yeasts in spent oak barrels, before allowing the wine to mature for 18 months in oak and stainless steel. The wine is chock-full of lemon, green apple, apricot, brioche, cream, and white flowers. A very fine Chardonnay showing complexity and depth. Thierry Pillot is one of Burgundy's brightest stars, and is one of the inheritors (along with his sister Chrystelle and father Paul) of Domaine Paul Pillot, which he took over and began running in 2004, but he crafts wines under his own name as well, producing understated and chiseled Pinot Noir and Chardonnay from some of the best soils in the Côte de Beaune. 13.0% ABV
