The La Posta Restaurant has a wonderful ambiance of an old Mexican Hacienda. The original Adobe walls that are still intact date back as far as the 1840's, have sheltered Billy the Kid, Kit Carson, General Douglas MacArthur, and Pancho Villa. On September 16, 1939, an entrepreneurial 25 year old Katy Griggs opened her “little chile joint” and named it La Posta. Her uncle, Edgar Griggs, loved his niece and admired her independent streak so much that he actually sold Katy the historic adobe property that would become La Posta for a mere “one dollar, love and affection”. For over 80 years, this southwest culinary treasure, housed in an 1840’s adobe compound in Historic Old Mesilla, has been serving authentic “New-Mex” cuisine from century old family recipes of the late Katy Griggs Camúñez. Using only local Chiles grown in the Mesilla & Hatch Valley, our La Posta Salsa, along with freshly made tostada chips, is still served with every meal in our restaurant today! Enjoy our La Posta Salsas and Sauces simply with your favorite chip or to enhance any appetizer, entrée, or side! Buen Provecho!
