"Drink these wines, and you get all that's great about Santorini Assyrtiko, and more." - Noble Rot's Dan Keeling and Mark Andrew As Santorini's Assyrtiko wines have become world-famous for their power and crisp minerality, one name has rises above many of the rest: Spyros Chryssos, and according to some, there may be a case for saying that his is the only true vigneron project on the island, because unlike most on Santorini, Spyros makes his wine exclusively from vines he farms himself and refusing to purchase stock from other farmers. He farms organically, utilizes indigenous yeasts, and keeps sulphur levels low, an combination almost unheard of in Santorini. The 2021 vintage of his 'Santorini' label is a unique combination of three indigenous varieties found on the island. Assyrtiko dominated, with additions of Athiri and Aidani, the wine is produced from exceptionally old vines, some up to 200 years old, and never sees a single touch of wood throughout its entire production. Lush and full-bodied, with lightly honeyed fruit and flowers, sea spray, and crunchy minerality. 14.0% ABV
