Thierry Germain, whose domaine is called Roches Neuves, has become one of the greatest examples of high achievement in biodynamic viticulture in all of France. Thierry harvests on the relatively early side compared to his neighbors, which allows him to preserve a freshness in his wine, and this beautiful Chenin Blanc from Saumur comes from ninety year old vines which are crushed and allowed to macerate on its skins in large Italian amphorae for four months before aging in barrel for an additional year. Chock-full of a kaleidoscopic blend of almonds, honey, lemon, and , with plenty of structure and acid, this is a Chenin for the ages. 12.5% ABV Show more
