Grapes: Primarily Regent and Domina, with portions of Schwarzriesling (Pinot Meunier), a splash of Pinot Gris, and a small field-blend of red PiWi varieties. Process: A playful field blend: some grapes foot-stomped, others destemmed; macerations ranging from overnight to five days depending on variety. The wine matures partly in stainless steel, partly in used barrels. Bottled unfined and unfiltered, with minimal added sulfur. About the Producer: Wein Goutte! is the project of two former chefs turned vignerons, cultivating around 3.5 to 4 hectares organically in Franconia on soils of Gipskeuper.
