The old vines mean small, concentrated yields and a loose grape structure. White grapes are macerated for 60 days, as per Schnaitmann’s red wines. Spontaneous fermentation then aged for 10 months of maturation in old 300-liter wooden barrel, bottled without the addition of sulphur or filtration. Pairs well with sushi/sashimi, mushrooms, vegetables, river fish, seafood, poultry, game and veal.
