Seaside spinach is a vigorous, heat-tolerant variety that produces large, dark green, smooth to lightly savoyed leaves on upright plants. The leaves are tender when young with a mi ld, sweet, earthy flavor and excellent texture. It is excellent fresh in salads, sautéed with garlic, wilted into soups and pasta, blended into smoothies, or used in quiches and egg dishes. This variety is a good choice for Utah because it is notably heat-resistant and slow to bolt, allowing extended harvests in our variable springs, hot summers, and falls with good drainage and consistent moisture.
