Self-Blanche (Self-Blanching) is a reliable cauliflower variety that produces large, tight, snow-white heads with good flavor and texture. Its distinctive feature is that the leaves naturally curl over the developing head to protect it from sunlight, eliminating the need for manual blanching in most conditions. The heads have a crisp, tender texture and mild, sweet, nutty flavor when cooked. It is excellent steamed, roasted, stir-fried, added to casseroles and soups, or served raw with dips. This variety is a good choice for Utah because it is cold-hardy, performs well in our cool springs and falls, and produces quality heads reliably in our shorter cool seasons with full sun and fertile, well-drained soil.
