The touch of residual sugar is barely noticeable while it balances the striking acidity of the Torbato grape. Fuller than Prosecco and more interesting than most tank method sparkling wines.Winemaking: Torbato grapes are immediately pressed off their skins on arrival at the winery. First fermentation occurs in large stainless-steel tanks to retain freshness and delicate aromas. Second fermentation lasts 20 days and is stopped just before all of the sugars are consumed by the yeast. Filtered off the yeast and left to rest for 2 months in tank before bottling.Sommelier’s Selection: Fresh and refined, this lovely, easy going sparkler opens withscents of white spring wildflowers and nectarine.
