This brewery is on a mission to renew centuries-old sake-making traditions while using the most natural ingredients. This sake is brewed using the labor-intensive kimoto method, an d utilizes the ambient yeast of the brewery. It’s made with the original, ancient strain of Kamenoo rice, organically farmed.
