“Retro” belongs to the brewery’s “Edo-gaeri” series, which seeks to return to traditional techniques. At the same time, it embraces Senkin’s signature juiciness. The orthodox kimot o brewing method is used for the starter mash, and the heirloom rice strain Omachi is employed for its distinct sweetness and acidity.
