Our class will help change that, giving you all the understanding and confidence to make it a regular part of your culinary repertoire. From sourcing to shucking, seasons to seasoning, we cover everything you need to master British shellfish and molluscs. We will make hand-dived scallops served in shell with a delicate sauce Veronique, before moving on to Asian-inspired mussels and prawns in broth, finishing with a simple, flavourful warm squid salad with orzo and rocket – all enjoyed with a complimentary glass of wine. Any student who arrives to class intoxicated, or appears to be so during class, will be asked to leave and not qualify for a refund. Cancellation Policy: You must contact us 7 working days before your class to be eligible for a full refund. You can transfer your seat to a different class up to 3 days before your class date.
