This wine is made from low yield and hand picked fruit to produce a premium wine with intense colour, flavour, structure and regional characters. It is medium to full in weight, with hints of spice. Grape Variety: 100% Shiraz Vineyard Planted: 1990 Wine Analysis: Alc/Vol. 12.5% Harvest Date: March 2019 Bottling Date: July 2021 Total Production: 3600 Bottles Bottle Size: 750 mL Standard Winemaking: De-stemmed berries into open fermenting vats. Juice was inoculated with a suitable yeast culture, the cap was hand plunged 3 times daily, with total maceration time of 12 days. The fermented wine (the Must) was pressed into tanks to undergo malolactic fermentation. Maturation: In 225-Litre new and one-year-old French Oak Barrels, for a period of 24 months. The wine was then blended and clarified prior to bottling. Colour: It boasts a vibrant purple colour. Aromas: Dark cherries and plum fruits are surrounded by notes of mocha. Palate: Displays flavours of cherries, plum and mocha, followed by pepper spice and fine tannings providing lovely structure and length. Peak Drinking: Until 2029 Vigan Friendly. Released: May 2025
