Short Ribs come from the beef chuck portion of the cow, and there are usually five of these small pieces of meat that are too small to be labelled as steaks. So, they are precisely what the name implies, short ribs. Lisolo Farms recommends bone-in short ribs as they are more flavourful and will cook more evenly.
