Our sifted bread flour is a 80-85% high extraction sifted wheat flour. It is neither a white flour nor a whole-wheat flour. Instead, it is a stone-ground flour from whole grain whe at berries that is sifted after milling. This results in a strong and extensible flour that has the strength of a white flour and the aroma and nutrition of a whole-wheat flour. This is the flour we use as the foundation of our bread.
