The most prized of all white teas, Silver Needle - Baihao Yinzhen - is produced exclusively from the downy, unopened buds of the Da Bai cultivar in Jing Gu Mountain, Yunnan Provinc e. Each bud is hand-plucked during a narrow spring window, then air-dried with minimal processing to preserve its natural character. The cup is pale and luminous, with a clean, subtly sweet flavour: melon, fresh hay, a hint of vanilla from the fine silver hairs on the bud. Gentle, rare, and genuinely beautiful.
