Barnbarroch's Silverside Joint is an excellent choice as the centre-piece of your roast dinner. Silverside is taken from the hindquarters of the animal - a lean, larger, boneless joint. It lends itself to a slower approach to roasting to make that melt in the mouth experience that we know our discerning customers savour. Baste it well, sit it on a trivet if you can or if not, directly on to a bed of carrots and celery, which will form a stunning base for your gravy. Our slow-grown beef has been grass-fed on our organic farm in rural south-west Scotland and enjoyed dining on meadow grass and relaxing in our rolling green fields.
