Simmental is a breed of cattle whose history dates back to the Middle Ages. Early records indicate that Simmental cattle were the result of a cross between large German cattle and a smaller breed indigenous to Switzerland. The name Simmental is derived from the name of the area where the cattle were first bred - the Simme Valley which is situated in the Berner Oberland in Switzerland. These cows were used as dairy cows for a couple of years in their life, before retiring and grazing on green pastures building up fantastic marbling and rich yellow fat for complex and mature flavour. Our Simmental chops come from Italy where the beef was hand-picked and carefully selected by Gruppo Galli especially for Provenance.If you've had it before, then you know!
