Solely from the 2018 vintage and draws from their 1 acre that has been converted to organics, raised in the COVAMA facility. The cuvee is a blend of 78% Chardonnay and 22% Pinot Me unier that was primarily vinified in stainless steel and spent 4 years on its lees before being disgorged with a dosage of 8 grams per liter. The nose opens with aromas of rose hips, citrus, apricots, puff pastry and a rounded minerality.
