Singularis Shiraz A Ulithorne late release program was established to showcase our best wines. We wanted to make sure when the wines are released, it would be at the start of their drinking window to be enjoyed but that can also reward cellaring. The 2015 is the first vintage released from the program. The Shiraz was sourced primarily from Ulithorne's 65 year old dry-grown vineyard in Blewitt Springs, handpicked, cooled overnight, open-fermented, basket-pressed to 20% new and 80% used French oak for 15-18 months. Both black and blue fruits join hands with a touch of regional chocolate, the tannins fine in best Blewitt Springs style, oak no more than a conveyance. It is a wine that celebrates the elegance & intensity of flavours of old bush vine Shiraz. With spice & ripe cherries on the nose, driving length of blood plums and an elegantly weighted palate, the flavours are balanced with soft tannins. This is a velvety shiraz with gorgeous purity of fruit and perfectly integrated cedarwood oak. It’s bold and dark-berried but it feels calm, composed and neat.
