A longer infusion releases fuller flavour and herbal benefits. Make sure the water is just below boiling point (about 95°C) to maintain the maximum benefit of the herbs. Try pouring a dash of cold water over the herbs before adding boiling water. This will ‘wake’ the herbs and they won’t be burnt by the hot water. We recommend 2 teaspoons of herbs per serve (250ml). Serves Approximately 50-60 cups per large jar and 15-20 cups per small jar. You can steep these herbs a couple of times to get maximum benefit from them.
