Alcohol percentage: 13.5% Area: Adelaide Hills – a key cool climate region in South Australia. Shaw & Smith own 3 vineyards in Balhannah, Lenswood, and Piccadilly totalling 59 hect ares, planted in 1999 and now in the process of becoming fully organic. The Pinot is predominantly from Lenswood. Grape variety: 100% Pinot Noir, 20% fermented as whole bunches; matured for a year in French oak puncheons (twice the size of normal barriques) with very little new wood used.
