Smoke Wagon Desert Colt Bourbon 750ML is a cask-strength, non-chill-filtered bourbon bottled at approximately 58.35% ABV (116.7 proof) in a 750ml bottle. This high-rye expression earned a Gold medal at the 2023 San Francisco World Spirits Competition, standing out for its unique desert-climate maturation in Las Vegas warehouse conditions that accelerate and intensify the aging process in ways Kentucky warehouses simply cannot replicate. Quick Facts: ABV: ~58.35% (116.7 proof, varies by batch) | Origin: Las Vegas, Nevada | Cask Strength, NAS | Distillery: Nevada H&C Distilling Co. (sourced from MGP, Indiana) Production & Heritage Nevada H&C Distilling Co., based in Las Vegas, sources its distillate from MGP of Indiana — one of the most respected contract distillers in the American whiskey industry. The Desert Colt uses a high-rye mashbill of 60% corn, 36% rye, and 4% malted barley, then matures in barrels stored on the top floors of the company's Las Vegas warehouse, where extreme desert heat drives aggressive interaction between spirit and oak. The bourbon is bottled undiluted at cask strength and without chill filtration, preserving the full spectrum of texture and flavor compounds developed during that punishing Nevada maturation cycle. Tasting Notes Aroma: Candied fruit and sweet cornbread lead the nose, followed by layers of nutty vanilla and a warm undercurrent of cinnamon spice. With time in the glass, oak char and a toasted nuttiness emerge, adding complexity. Taste: The palate entry is surprisingly fruit-forward and sweet given the proof, with honey and toffee flavors coating the tongue. At mid-palate, the 36% rye asserts itself through a wave of cinnamon spice, baking spice, and light oak tannin. The non-chill-filtered bottling gives the liquid a buttery, creamy mouthfeel that drinks far more delicately than its 116.7 proof would suggest. Finish: The finish is medium-long, led by bold cinnamon spice and gentle warming heat that lingers without overwhelming. Residual toffee sweetness and a thread of dry oak char carry through the close. How to Drink Desert Colt Neat with a few minutes of rest in the glass is the ideal way to appreciate the full range of this cask-strength bourbon; a few drops of water will open it further and tame the proof for those who prefer a softer experience. Its high proof and bold flavor profile also make it an outstanding cocktail base. An Old Fashioned benefits from the Desert Colt's candied fruit sweetness standing up to bitters and dilution. A Boulevardier gains depth from the rye-heavy spice cutting through Campari's bitterness. A Gold Rush (bourbon, honey syrup, lemon) lets the existing honey and toffee notes harmonize with the cocktail's sweetness while the proof keeps the drink structured. Desert Colt delivers a fruit-forward, candy-sweet bourbon profile with honey and toffee at the core, transitioning into bold cinnamon spice and light oak tannin. Despite its 116.7 proof, the non-chill-filtered bottling gives it a buttery, creamy texture that drinks surprisingly smooth. How does Desert Colt compare to Elijah Craig Small Batch? Both are well-regarded bourbons in a similar price tier, but Desert Colt runs significantly hotter at cask strength (~116.7 proof) versus Elijah Craig Small Batch at 94 proof. Desert Colt also uses a much higher rye percentage (36% vs. Elijah Craig's lower rye mashbill), resulting in more pronounced spice and a bolder overall flavor profile. Is Desert Colt good for sipping neat? Absolutely — its creamy, non-chill-filtered texture and layered flavor complexity reward careful neat sipping, though a splash of water can help open the spirit and soften the proof for newcomers to cask-strength bourbon. Where is Desert Colt made? The bourbon is distilled at MGP in Lawrenceburg, Indiana, then transported to Nevada H&C Distilling Co. in Las Vegas, Nevada, where it matures in top-floor warehouse barrels exposed to extreme desert heat before being bottled at cask strength. What foods pair well with Desert Colt? Smoked brisket highlights the bourbon's oak char and spice. Dark chocolate truffles mirror the toffee and cinnamon notes. Pecan pie echoes the nutty vanilla aromas. Aged cheddar provides a savory counterpoint to the candied fruit sweetness. Cinnamon-spiced churros amplify the finish's baking spice character. What sizes does Desert Colt come in? Smoke Wagon Desert Colt Bourbon is available in the standard 750ml bottle size. Is Desert Colt worth the price? Desert Colt positions as a mid-premium cask-strength bourbon that delivers well above its price tier, particularly given its non-chill-filtered bottling, high-rye MGP distillate, and unique desert aging — attributes typically found in more expensive limited releases. Why Desert Colt? What separates Desert Colt from the crowded field of sourced bourbons is its Las Vegas warehouse maturation, where barrels stored on upper floors endure temperature extremes that dramatically differ from the rolling hills of Kentucky. That desert aging pushes the spirit deeper into the oak and accelerates flavor extraction, yielding a bourbon with concentration and character that punches above its weight class. The 2023 San Francisco World Spirits Competition Gold medal validated what barrel-proof bourbon hunters had already been discovering. Paired with MGP's proven 60/36/4 high-rye mashbill and a commitment to non-chill-filtered, cask-strength bottling, Desert Colt represents one of the most compelling values in the barrel-proof bourbon category today.
