Snow Crown cauliflower is a hybrid variety known for producing large, uniform, pure white heads (curds) typically 7-9 inches across and weighing 2-3 pounds, with tight, smooth domes that are dense and attractive with minimal side shoots. The heads have a crisp, tender texture when harvested young, and the flavor is mild, sweet, and creamy—less bitter or cabbage-like than many cauliflowers, making it one of the most appealing for fresh eating or light cooking. It's excellent steamed or roasted to preserve its delicate sweetness, pureed into creamy soups or sauces, added to stir-fries and casseroles, served raw in crudités or salads for crunch, or used in gratins and cheese bakes for its classic white appearance and mild taste. This variety is a good choice for Utah because it's one of the earliest-maturing cauliflowers available, allowing reliable head formation in our short cool-season windows with spring or fall planting, it's relatively heat-tolerant for a cauliflower (less prone to buttoning or loose heads in warmer spells), and it's consistently recommended by USU Extension as a productive, high-quality option that performs well in fertile, well-drained soil under full sun when using transplants to get ahead of temperature swings.
