It is generally two to six inches long with two to four pairs of leaves. The taste resembles snow peas, but with a grassier, fresher flavor. Snow pea tip is most often stir-fried with garlic. Handling Tip Selection The leaves have a uniform green color with no signs of yellowing or wilting. Few to no curly tendrils and no signs of flowers. Storage Snowpea tips should be stored at 32°F - 34°F (0°C - 1°C) with a relative humidity of ninety-eight to hundred percent. The typical shelf life is five to seven days. Snow pea tip is sensitive to ethylene, a naturally occurring gas that regulates ripening. Do not store snow pea tips with high ethylene-producing products to extend shelf life and avoid leaf yellowing. Snowpea tip produces a low level of ethylene. Snowpea tip is not sensitive to chilling injury and should be stored as cold as possible without freezing. Snowpea tip is susceptible to freezing injury at storage below 28°F (-2°C). Freezing will damage leaf tissues.
