Sodium Alginate It’s a key ingredient for keto egg noodles and popping boba as it makes the mixture thicken and react to the calcium water bath to set and form the food creations.It is a molecular food gastronomy ingredient – using chemistry and physics to make edible culinary creations. It is used along with Calcium Lactate / Calcium Chloride to achieve spherification. Fascinating and totally fun to see this happen! Plus it's the active ingredient in reflux medication and works by 1) activating with the acid in the stomach to form a gel like foam. This creates a physical "Raft" Barrier that floats on top of the stomach contents, acting as a physical lid to prevent acid, pepsin, and bile from refluxing upward. 2) It targets the acid pocket at top of the stomach, neutralising the pH, preventing highly acidic fluid from immediately entering the esophagus. 3) It forms a protective, viscous coating on the esophageal lining giving it protection, reducing inflammation. It begins acting quickly and the raft lasts for several hours, providing protection through the "postprandial" (after-meal) high-risk period.
