Enric Soler utilizes low-intervention protocols on the local clay-limestone soils to cultivate fruit with natural structural density. The grapes are hand-picked and fermented spontaneously with native vineyard yeasts in a tailored selection of neutral French oak barrels. It ages on its fine fermentation lees for several months, completely avoiding modern chemical corrections or heavy filtration. It displays a bright yellow-straw color, releasing complex aromas of yellow plum, chamomile blossoms, fresh pastry, and wet limestone. On the palate, the full-bodied framework balances a rich, slightly creamy texture with a sharp line of mineral acidity. Concentrated flavors of yellow pear and lemon curd blend across a dense mouthfeel. A strong vein of maritime salinity cuts right through the center, keeping the profile fresh and focused. It finishes long, dry, and persistent.
