Mancilla started out as a picker and jornalero, working other people's land for years before he saved enough to buy his own farm. He runs it now with his wife Orfanelly and their son. That's the whole point of this program: you know whose farm paid for whose kid's school.What it tastes likeVibrant stone fruit acidity, a grapefruit-like brightness, and a rounded turbinado sugar sweetness underneath it all. Grown at 1,900 meters and fully washed, which is the process that gives Colombian coffee its clarity. Washed means the fruit is stripped off before drying, so what you taste is the bean rather than the fruit fermenting around it. If a natural-process coffee has ever struck you as boozy or too wild, this is the clean opposite.The catch, stated plainlyThe tasting notes above are true for this lot. When Mancilla's coffee sells out, the next producer's coffee will taste different. What stays fixed is the sourcing model and the quality floor, not the flavor. If you need the exact same cup every month, this isn't that coffee. If you like meeting a new farm a few times a year, it's the best thing in the shop.Which size 1/2 lb is the right first buy.
