SoloUva, the Franciacorta-based winery known for its “grape-only” method, has expanded into Oltrepò Pavese with new vineyards dedicated to this project. Open follows the same philo sophy that defines the estate: using only grape must for the second fermentation, with no added sucrose. The wine is made from Pinot Noir and Chardonnay grown on calcareous soils of the Oltrepò hills, fermented with native yeasts and aged on the lees to develop subtle texture. The profile is clean and dry, with citrus, green apple, and a gentle yeasty note, showing a more linear, straightforward character compared to the Franciacorta cuvées. Show more
