Character & Style An expressive Pinot Gris with juicy fruit and subtle spice. The extended skin fermentation gives the wine its characteristic pomegranate hue. Redcurrant and dark berries shape the nose, accompanied by earthy, herbal and lightly peppery notes. On the palate, Sonate is dense and lively, with fine tannins, fresh acidity and a pleasantly savoury edge. The fruit remains present, while spice and a subtle bitterness bring definition and length. The extended skin fermentation gives the wine the structure of a light red. Origin & Vinification Sonate is made entirely from Pinot Gris grown in the Osperling and Aeschweg sites in Gueberschwihr. The vines grow on clay-limestone soils and are farmed organically. The grapes are harvested by hand and selected directly in the vineyard. Whole and destemmed grapes macerate on the skins for 20 days and undergo spontaneous fermentation. The wine then ages for 12 months in large foudres. Sonate is bottled unfiltered, with a small addition of sulphur before bottling.
