Sorbic Acid is an organic compound acts as an antimicrobial agents and mold inhibitor. Often used as preservatives in wide range of processed foods to prevent the growth of mold, b acteria, yeast and fungi. * It is also used in processed meats as an alternative to preservation using nitrites. Sorbic Acid is soluble in fats, oils and some solvents but virtually insoluble in water.
