It is washed in a mixt ure of brine and Marc de Bourgogne to give it's orange-y colour and full bodied aroma. When young, it is mild, buttery with a chalky centre core that softens as it gets to room temperature. With age, it becomes pungent and will be completely runny inside. At this point it is a much stronger cheese and pairs well with Chablis or even sparkling wines. It is sold inside of a small wooden box so that when it is ripe, you will be able to just scoop it out and put it on a beautifully crusty baguette. Show more
