This pasta is toothsome and slightly sweet, and very satisfying. Mancini pasta is produced from durum wheat they grow! Semolina and water are the only ingredients. They use circula r bronze die plates and dry the pasta at temperatures lower than 130F, taking about 25 hours for short pasta and about 45 hours for long pasta.
