Our spelt flour brings a gentle, nutty sweetness and a soft, tender crumb to your sourdough. An ancient grain with a loyal following, spelt is a lovely way to add a little something different to your baking. Explore our full range of flours here. Features Milled from premium Australian-grown spelt, an ancient relative of modern wheat. Naturally nutty and slightly sweet, with a soft, tender crumb. Great in sourdough, and just as happy in muffins, pancakes and everyday bakes. Blends beautifully with white bread flour for extra flavour and softness. No artificial colouring or bleaching, just wholesome spelt. How to use it Spelt has a more delicate gluten than regular wheat, so it is happiest blended rather than going it alone. Start with about 25% spelt and 75% white bread flour to keep a good rise while you get a feel for it. Spelt also drinks up a little less water, so hold back a touch of your liquid and add more only if the dough needs it. From there, adjust to suit your taste.
