The Rivetti family manages the estate plots sustainably, picking the fruit by hand at optimal phenological balance. Fermentation takes place inside temperature-controlled rototanks for seven to eight days to manage tannin extraction. The liquid matures for twenty-four months in a combination of new and used French oak barriques. It pours a clear garnet hue, opening with a complex nose of wild black cherry, dried rose petals, licorice, and tar. On the palate, a medium-to-full-bodied frame pairs concentrated dark fruit flavors with a firm, assertive tannin backbone. Savory layers of iron, cedar, and tobacco leaf unfold as the fluid mouthfeel expands. A bracing line of alpine acidity cuts through the structural weight, maintaining great focus. It cleanly finishes long, dry, and persistent.
