Quick Facts: ABV: ~14.5% | Origin: Spring Mountain District, Napa Valley, California | Vintage: 2016 | Distillery: Spring Mountain Vineyard Production & Heritage Spring Mountain Vineyard occupies 226 acres on the western slopes of the Napa Valley, with elevations ranging from 250 feet to over 1,600 feet above sea level. The estate is divided into 135 unique hillside vineyard blocks, each varying in altitude, slope, soil composition, sun exposure, and microclimate — giving the winemaking team an extraordinary palette of fruit sources to draw from when composing the final blend. The 2016 Cabernet Sauvignon spent 20 months aging in French oak barrels, with 60% new wood, lending structure and aromatic complexity without overwhelming the fruit. This combination of mountain fruit intensity and meticulous barrel aging defines the estate's approach to Cabernet Sauvignon. Tasting Notes Aroma: The nose opens with layered cedar and cassis before unfolding into bay leaf, dried violets, and a subtle thread of white peppercorn. There is an unmistakable dark-fruit richness underneath that signals the wine's mountain origins. Taste: On entry, blackberry bramble and black plum coat the palate with concentrated fruit, building toward a mid-palate where cocoa and bright red-fruit notes emerge. Savory undertones of thyme and sage leaf add depth, while the French oak integration provides a polished framework without veering into overtly woody territory. Finish: The finish is long and drying, anchored by dusty, fine-grained tannins that grip without harshness. Lingering notes of sage, dark plum, and a faint mineral quality sustain well past the final sip. How to Drink Spring Mountain Cabernet This wine is best enjoyed at cellar temperature (60–65°F) in a large-bowled glass. Given the tannin structure, decanting for 45–60 minutes before serving allows the aromatics to fully develop. While this is primarily a wine built for the table and the glass rather than cocktails, it pairs exceptionally well with food-forward settings: serve alongside a bone-in ribeye, braised short ribs, or aged hard cheeses where the wine's tannic backbone and dark fruit can meet rich, savory flavors head-on.
