Straddling the line between a traditional Asian cleaver and a Western chef’s knife, our Santoku is crafted from premium MBS-26 stainless steel and ground extremely thin for low-friction cutting performance. Its “stepped” black polypropylene handle provides a comfortable, secure grip and is injection molded directly onto the tang of the blade for added strength. Notes I'm not able to determine if this is true or not, but Spyderco claims to be the first company to bring the Santoku to the USA, which I think is quite an awesome piece of trivia if true. This Santoku design is also pretty distinctive among other santoku models because it has an extra tall blade, making it much easier to move stuff from your cutting board to a bowl or pot or pan. Like many other in-house designed Spydercos, the handle is quite comfortable in a variety of grips. The heel of the edge is also slightly truncated, which may act as a sharpening choil and minor safety feature. I believe the Spyderco kitchen classics series are still OEM'd by Masahiro in Seki City. I forgot where I heard this from, but I recall hearing/reading that Masahiro is next door to one of the Spyderco folder OEMs, so you can sometimes see Masahiro branded knives with an authentic SpyderEdge serration pattern.
