There is not a lot of meat on a squirrel apart from the haunches - the back legs - which give the most meat. The flavour is light, sweet and finely textured, closer to a more refined rabbit with a nutty edge from a diet of acorns, hazelnuts and beech mast. Best slow-cooked into a casserole, a ragu or a Cornish-style pasty, or roasted and basted carefully to keep the lean meat moist.
