The strip sits in the middle with good flavor and a good chew. Don't expect the heavy marbling of grain-finished beef. Our bison is 100% grass-fed and grass-finished, which means less fat and a cleaner, more honest flavor. The package size listed is your guaranteed minimum, and many packages run slightly heavier.
