Alcohol: 12.5% Grape(s): 100% Chardonnay Location: Jura, France Tasting Notes: This wine has a beautiful expression of stone fruits and honey enhanced by lovely spices in the background. Crunchy, yet rich attack followed by a lovely minerality and fruits notes over a long finish. Notes: Patchwork is made from Chardonnay grown on clay-limestone soils, and whose average age varies between 20 and 50 years. After a manual harvest, fermentation is carried out with indigenous yeasts, and vinification takes place in barrels, 10% of which are new. Aging lasts 12 months in oak barrels. Food pairing: Pairs well with shellfish, white meat, mushroom risotto or cheeses such as Comte, Gruyere and Emmentaler Winery Story: The Tissot family has been producing wine in the Jura since 1962, with Stéphane and Bénédicte taking the reins from their parents, André and Mireille. They have since acquired a formidable reputation as being among the region's top winemakers, farming biodynamically since 2004 and striving to express the character of the Jura terroir above all else. Domaine Stéphane et Bénédicte Tissot is in Arbois, a commune located within Jura, about 30 miles west of Switzerland. It's an insular area that specializes in unique renditions of both classic and little-known grapes. Bénédicte et Stéphane Tissot are a powerhouse winemaking couple based in Arbois, in the Jura region. Their perspective plays a vital role in the style of their wine. They favor natural wines over industrial ones, and wines that showcase nature’s gifts rather than winemaking. Their wines have been certified biodynamic by Demeter. Many of Jura’s wines adopt an oxidative style; theirs do not. They prefer a reductive style, the opposite of the local style. Their love is shown in their passion and drive to make a variety of wines.
